I added local fonts to not needing to load from Google (GDPR), which is working fine. But Google Inter seams to be added automatically every time I remove it, it comes again in the “Manage Fonts” page.

Yeap, this is a bug. In past we had only Google fonts available, and we have set a limit of 1 google font to be required… and after we introduced custom fonts, we didnt take care of Google font limitation.
