I’m using a template, and there are pages that I don’t plan to use in the near future. However, I don’t want to delete them, as I might use some design, sections or entire pages down the road.
How should I approach SEO for those pages? Should I choose the “Nofollow” option?

You mean pages /subpages or collections?
Click SEO setting of the page and there you can make them noindex.
Yes, I mean subpages, but those that I only want to have visible in the builder. An SEO specialist advised to have as least noindex pages as possible. Google is not clear in that regard, but that’s an overall sentiment.
If I understand correctly, whenever you create a new page in the builder, you have to set it to noindex, there’s no draft mode or something like that?
Yes, but when your are adding it as a collection you have to add such information in robo.txt
for example Disallow: /en/projektowanie-ogrodow/ - not doing it in English so google search console show it as error(even when its not published beacuse it shows in sitemap , after adding it to robo.txt, you can see they are not errors just not indexed intentionally
