How can I delete additional loops? I have three, but I want to remove one, and I can not figure out how to do it for the life of me. I’m sure it’s something relatively simple, as all things end up being.

Well, amazingly, I figured it out after I posted. (sigh)
Right-click and change the Loop input to the number I need.

What if you don’t need to delete the last item, but one in the middle?
I’ve been super curious about this too!
That’s is current limitation of loop that we are trying to solve, but it’s bit difficult

The work around I found for now is set the custom CSS on the loop item. Like loop-item-hide and then hide via design panel.
I am guessing you are referring to class? Another way could be also setting hidden attribute, inside Settings tab on the right panel at the top. That would be also applied to that one looped element
