I am trying to style my blog page in CMS with Quotes and Captions. However, when I go to the Global selection child selector, I don’t see the option to target those elements. What am I missing?

Yeap, it’s missing, for now you can target it with custom CSS, until we add it there.
You can open and editing custom states like on screenshot, just you would need to know what to target
